A Recipe For Aggie

Leek & Barley Casserole

2 tbsp Olive Oil

1 C Barley

1 Medium Yellow Onion

4 C Vegetarian Stock

2 C Water

4 C Leeks Coarsely Chopped

1 tbsp Toasted Sesame Oil

Fresh Ground Black Pepper

Heat pan add 1 tbsp oil and barley, brown. Transfer browned barley into a 4-6 quart casserole dish. Combine stock and water, add only 3 cups of liquid to the casserole dish. Cover and bake at 350 for 1 hour or until almost all the liquid is gone. Add remaining stock/water, leeks, onion, pepper and sesame oil and continue baking (covered) for 45 minutes or until all liquid is absorbed.
